Sue Chan Shares Recipes for a Three-Course Meal and Then Some

I gravitate towards recipes that are foolproof—in case you lose track of time after your second, or third aperitif. Losing track of time is a new form of luxury, and in times like these, we should give ourselves permission to indulge.

The following recipes are meant to be stress-free, with ingredients found at most grocery stores in most towns across the country. Of course, the better the ingredients you use, the better the recipe will turn out. Support your local grocery store, local restaurant that has opened a grocery store, or local farmer’s market, when possible. If you can afford this type of splurge, know that your purchase invests in a future where higher quality, ethically-produced food is more readily available for more people of all economic backgrounds.

As a general rule, all dinner party recipes must also be versatile and ideal for leftovers. For breakfast, lunch and maybe even dinner the next day, one meal can nourish you many times over. There’s nothing more delightful than exercising ingenuity to figure out how to make the most of what’s left behind.
